I love wraps for lunch. I don’t know what it is, but food just tastes better to me in a wrap than on a plain old sandwich. The possibilities of what can go in a wrap are endless. Plus they just look so much more fun to eat. I can’t be the only one either, because wraps are on menus in practically every restaurant you go to. This Roast Beef and Blue Cheese Wrap will be right up there with your other favorite wrap sandwiches.
Wraps became popular with the low-carb craze because tortillas have less carbs than bread. You can still get your sandwich fix without all of the carbs. Now I am not a low-carb eater, I just like wraps, but if you are watching your carbs, then wraps are a good option for you for lunch. These days, there are even flatbread wraps that are made just for this purpose. I used a whole wheat flatbread wrap for this, but a tortilla would work too. The flatbread wraps are awesome because they are only 90 calories and they are huge! You will not be hungry after this lunch.
Roast beef is a nice lean option when it comes to deli meat, especially if you get sick of eating roasted turkey breast all the time. Just be sure to get a natural roast beef. Blue cheese has a very pungent flavor, so you don’t need a lot of it. Don’t use fat-free blue cheese…it will taste like cardboard and ruin this wrap.
For the dressing in this wrap, I used plain nonfat Greek yogurt instead of mayo to lighten it up a bit. The spicy mustard gives it a nice flavor kick. As for the veggies, you can add whatever veggies you want. I have added red onion, sliced tomatoes, and even red cabbage to this wrap. Here I stuck with some good old lettuce leaves.
I started by laying my flatbread on the counter. In a small bowl, I mixed together the Greek yogurt and the mustard. Then I spread that all over the wrap.
Next I laid my roast beef on the wrap and sprinkled the blue cheese crumbles on top.
Finally, I added my lettuce leaves and rolled it all up.
I love how easy this wrap is to make. You can make this the night before for lunch the next day, or even right when you’re eating lunch because it’s that quick. Enjoy this wrap with some raw baby carrots and an apple, and you have one healthy, satisfying lunch!
